Vegetable Kimbap Recipe

Fresh Ingredients:

  • 2 eggs, beaten

  • 55g julienned carrot

  • 225g spinach

  • 4 strips of pickled yellow radish

Pantry Staples:

  • 2 tbsp grape seed oil

  • 4 sheets of gim (nori seaweed)

  • 600g cooked sushi rice (=120g uncooked rice)

  • 2 tbsp toasted sesame oil

  • Salt & ground black pepper

Instructions:

Prepare the omelet: Heat 1 tbsp of grape seed oil in a non-stick pan. Pour in just enough beaten eggs to coat the bottom. Cook, then flip. Repeat with the remaining eggs. Slice the omelets into 2 cm-wide strips.

Sauté the carrots: In the same pan, sauté the julienned carrots for 2-3 minutes with the remaining oil until tender. Season with salt and pepper.

Assemble the kimbap: Place a gim sheet on a bamboo (or silicone) mat. Spread about 150g of rice evenly over the lower two-thirds of the sheet, leaving a 4 cm border at the top. Brush the rice with sesame oil.

Add the fillings: Arrange the carrots, omelet strips, spinach, and pickled radish on top, packing them tightly.

Roll it up: Using the mat, roll the gim from the bottom edge firmly over the fillings, pressing gently to create a tight roll.

Slice and serve: With a sharp knife, cut the roll into bite-sized pieces. Wipe the blade every two cuts to prevent the rice from sticking.
